We need to reframe winter. I feel like we use up all of our goodwill by December 26th and then it’s a cold miserable slog to Spring. I have a 52 point action that includes January carolling, February-friendly fairy lights and moving “New me” diets until March. In the meantime, please allow yourself some decadence with this mascarpone laced slaw.
Ingredients
- 1 medium Kohlrabi, peeled and julienned
- 1 fennel bulb, sliced finely
- 1 sweet white onion, finely sliced
- 1/2 pink lady apple, peeled and julienned
- 50g walnuts
- 100g mascarpone
- 100g of mayo (light mayo is more than welcome)
- juice of one lemon
- Salt and pepper
Instructions
- Prep and chop walnuts
- lightly toast walnuts in a dry frying pan
- Combine all ingredients, adding lemon juice and seasoning to taste
