Ingredients

  • 1/2 lb butter
  • 1/2 lb sugar
  • 6 large eggs
  • 1/4 lb currants
  • 1/4 lb raisins
  • 1/4 lb sultanas
  • 3oz ground almonds
  • 2oz candied peel
  • zest of one large orange

Instructions

  1. preheat oven to 180 degrees centigrade
  2. Beat butter and sugar until light and pale
  3. add 6 eggs, one at a time
  4. add flour and dried fruit, ground almonds and orange zest
  5. pour batter into a lined cake tin and bake or 1 hour
