Part 1 – Chocolate Sponge

Ingredients

  • 7oz SR Flour
  • 4oz Marg
  • 8oz Caster Sugar
  • 1/2 tsp Salt
  • 1oz Cocoa
  • 2 eggs – beaten with 5 tbsp water
  • 5 tbsp evaporated Milk
  • 2 tsp vanilla essence

Instructions

  1. Preheat oven to 180 degrees centigrade
  2. Sieve flour, sugar, salt and cocoa
  3. Rub in marg
  4. Stir in beaten eggs, vanilla essence and evapourated milk
  5. Pour into a greased and floured 8 inch cake tin
  6. Bake for 30 – 35 minutes

Part 2 – Chocolate Icing

Ingredients

  • 2oz Marg
  • 1 tbsp Cocoa
  • 9oz Sieved Icing Sugar
  • 3 tbsp hot milk ( If you are using evaporated milk, use 6 tbsp)
  • 1 tbsp Vanilla Essence

Instructions

  1. Melt marg
  2. Blend in cocoa
  3. Stir in sugar, milk and vanilla essence
  4. Beat until smooth and thick
  5. Allow the icing and the sponges to cool, before constructing.
