We need to reframe winter. I feel like we use up all of our goodwill by December 26th and then it’s a cold miserable slog to Spring. I have a 52 point action that includes January carolling, February-friendly fairy lights and moving “New me” diets until March. In the meantime, please allow yourself some decadence with this mascarpone laced slaw.


  • 1 medium Kohlrabi, peeled and julienned
  • 1 fennel bulb, sliced finely
  • 1 sweet white onion, finely sliced
  • 1/2 pink lady apple, peeled and julienned
  • 50g walnuts
  • 100g mascarpone
  • 100g of mayo (light mayo is more than welcome)
  • juice of one lemon
  • Salt and pepper


  1. Prep and chop walnuts
  2. lightly toast walnuts in a dry frying pan
  3. Combine all ingredients, adding lemon juice and seasoning to taste
